Cold, sweet rice pudding with jam and fresh fruits. The best quick summer dessert.
First things first I have to appologize because I disappeared in the last few weeks. I am visiting my relatives in Vancouver currently so that’s why I was sooo inactive lately. But I hope everything can go back to normal now. Also Vancouver and the Rocky Mountains are the most beautiful places on the world.
Now let me talk about one of my childhood favorites, rice pudding (“Tejberízs” in Hungarian). I am not sure where this dessert is from, but it’s definitely a typical thing to cook in Hungary.
It’s basically the easiest thing ever. You cook rice in a bit of water and lots of milk. You can add sugar if you want but I think it’s pefect without it because then you can add any kinds of fruits, jam or even chocolate sauce. The combinations are endless!
The great thing is that you can use anything you have on hand.
It’s definitely the best recipe for summer!
Rice Pudding
Prep Time: 5 min. Cooking Time: 30 min. Total Time: 35 min. Portions: 4-6 portions
Ingredients:
1 cup rice
4 cups milk
1 cup water
1/4 cup granulated sugar (optional)
fresh fruit,jam, chocolate sauce
Directions:
In a medium sized saucepan start to cook your rice in the water. Make sure your pan is covered with the lid.
When all the water is cooked away, pour 3/4 of your milk over the rice and start to cook it over a low heat. You can add the sugar at this point.
Stir it constantly, so the rice won't stick down.
Cook until your rice is completely cooked and you got a creamy thick pudding. Add the rest of the milk if required.
Serve it warm or cold with fresh fruits, jam or chocolate sauce.
