What's the dessert at a summer party? S'mores of course. And what is another summer favourite? Ice cream! If you want the best of both worlds you have to try this S'more ice cream sandwich recipe!


First things first, I have to admit something. I have never eaten graham crackers before! I know, I know! Such a shame. But in Hungary we do not have them. So basically I haven't tried the original S'mores before. You could ask "what the heck does this girl even know about S'mores then?!" And yes, I'm not an expert, but I've made S'mores with chocolate chip cookies and with some other cookies and crackers. And I know that they were soooo good!


This ice cream sandwich recipe came into my mind when we had some leftover chocolate ice cream. And since I'm not a fan of basic chocolate ice cream I wanted to create something special. It is a really fast recipe if you use store bought chocolate ice cream. But you can make your own ice cream with no machine ice cream base (heavy cream and sweetened condensed milk) and some melted chocolate. I'm sure it would taste even better!


This time the main star of the dessert was the homemade graham cracker. I used Gemma Stafford's recipe. I can't really compare it to the original graham crackers, since I have never eaten any. But these cookies are sooo freakin 'delicious !!! Unfortunately I only made a half batch ... huge mistake !! The more homemade graham crackers you have on hand is the better !!!


Basically the whole thing took me 30 minutes, plus 30 min cooling time. I think this would also be amazing at a party. You can make some graham crackers a day ahead. Then you set up a little serving table with different ice creams, toppings, marshmallows.


Last, but not least let's talk about the flavor. So the crispy graham crackers, and a tiny bit of cinnamon. Then a good quality, rich, cold chocolate ice cream. And some warm, roasted ooey-gooey marshmallows. I mean what could be wrong with these ice cream sandwiches ?!


And one last thing. You can make these inside too. Just line a baking sheet with a pergament paper, spread the marshmallows into a single layer and broil them under the grill, in your oven! So guys, you don't have any excuses! Go and make some ice cream sandwiches!


S’more Ice Cream Sandwich

 

Prep Time: 10 min. Baking Time: 10 min. Total Time: 30 min. Portions: 10-12 sandwiches

 

Ingredients:

  • 1 cup or 150g whole wheat flour

  • ½ cup or 80g brown sugar (light)

  • ½ teaspoon baking soda

  • ¼ teaspoon salt

  • 50g butter (small piaces)

  • 40g honey

  • 1,5 tablespoons milk

  • 1 tablespoon vanilla extract

  • ½ teaspoon cinnamon

  • around 500-700g chocolate ice cream

  • around 200g marshmallows (anysize, I used mini but you can cut bigger ones into smaller pieces too)

Directions:

  1. Mix the flour, brown sugar, baking soda, salt, cinnamon in a food processor.

  2. Add the butter and pulse until you get fine crumbs.

  3. In a seperate bowl mix together the honey, milk and vanilla.

  4. Add the milk mixture to the flour and mix until it comes together. It will be a bit sticky. Wrap it into plastic and put it in the fridge for 30 min to 1 hour.

  5. Preheat your oven to 350F or 175 C. Line a baking sheet with parchment paper.

  6. On a floured surface roll out the dough until it’s ¼ cm thick. Cut out 3 inch X 3 inch or 7cm X 7cm squares.

  7. Bake them for 10-12 minutes or until they are golden brown. They will set and become crunchier as they cool down.

  8. Roast your marshmallows for a few minutes. In the oven it took me 5 minutes.

  9. Scoop one or two scoops of chocolate ice cream onto a cookie. Then sandwich a few marshmallows between the cookies.
