A spooky halloween dessert with a touch of extra craziness.
Last summer I ate a Rocky Mountain Chocolate Factory Apple pie caramel apple which was the first one in my life. To be honest I have never thought that something as simple as some apples dipped in caramel could be that extra special. I was completely wrong! That apple pie caramel apple was sooo freakin’ delicious! So I decided to recreate it at home.
More than a year later I finally made it! Best decision ever! They turned out as delicious as the originals though not as good looking. But who cares?! Only the taste counts!
I made two different flavoured. The copycat version of the one I ate in Vancouver and a simple chocolate one.
For the caramel part I used a different caramel sauce. Guys, this one was soooooo much better than the one I used before. You have to try it for sure!
You can use any kind of apples. This time I used some granny smiths because I like the tartness of them with the sweet caramel and chocolate.
And now let’s talk about the apple pie one. It has a layer of caramel of course, then I dipped it into white chocolate! Already sounds amazing, huh? BUT I coated it with some cinnamon sugar, and this is what makes it even better! It tastes exactly the same as the Rocky Mountain one.
If you are one of those people who think a caramel apple isn't worth the calories (like I was before) you should definitely try making them! And since they contain apples it’s basically not that unhealthy isn’t it?
P.S.: On the photos you can see my sister’s hand. Yep, I know I haven’t mentioned her before! So this is the perfect time. She is 5 years younger than me and a grilled cheese sandwich expert. Literally she makes the BEST grilled cheese sandwich ever!
Apple Pie and Chocolate Caramel Apples
Prep Time: 40 min. Total Time: 1 hour Baking Time: - Portions: 6 apples
Ingredients:
1 cup heavy cream
1 cup granulated sugar
½ cup corn syrup or honey ( I use honey and it gives a bit of adifferent flavor, which I really like)
½ cup water
¼ cup or 60g butter
1 teaspoon vanilla extract
6 medium apples (I used granny smith)
100g white chocolate
100g milk chocolate
4 tablespoons granulated sugar
1 teaspoon cinnamon
6 wooden sticks
Directions:
For your caramel put the 1 cup sugar, honey and water into a sauce pan and boil until golden brown for around 10-20 minutes.
Add cream, butter, vanilla and stir constantly for 25-30 minutes or until your candy thermomether reaches 235 F or 110 C.
Prepare your apples, wash them and push the stick into the top of the apples. Line a baking sheet with parchment paper.
Dip your apples into the caramel and place them on the baking sheet. I recommend using a bowl that is wide enough for the apples but also quite tall; it makes the dipping a lot easier. Let the caramel set.
Melt your chocolates in two bowls. Mix the 4 tablespoons of sugar with the cinnamon.
Dip three of your caramel apples into the white chocolate and three into the milk chocolate and let them set for a few minutes, until the chocolate is not completely runny.
Sprinkle the white chocolate ones with a generous amount of cinnamon sugar. You can experiment with different kinds of chocolate to create some pattern. Let them set for 15 minutes before serving.
