Pumpkin season is back!!!! Let’s start it with something healthy(ish). These pumpkin granola bars are super moist, pumpkin-y, spicy delicousness.


As every basic fall lover I am just obsessed with pumpkin. But you can’t have a pumpkin pie everyday. I mean practically you could but that wouldn’t be that healthy. So when you are craving for something pumpkin-y, but not packed with sugar, these granola bars are the perfect decision.


This is the simpliest recipe ever! You just mix the wet and the dry ingredients together and bake the mixture for 20 min. And that is done! So I would definitely recommend to double the recipe and make a bigger batch that you can keep in an airtight container and eat during the week as a healthy snack or breakfast.


Now the flavors: the base is some oats, pumpkin puree and all the good pumpkin pie spices, cinnamon, ginger, cloves, all spice, then you can add any extra ingredients. This time I used some chocolate chips, but I think nuts or dried fruits could make it even better.


I like to use homemade pumpkin puree all the time. It really isn’t complicated, you just cut your pumpkin in half and bake it in the oven until soft. But be careful, because it tastes amazing when it’s freshly baked and you can easily eat the whole thing before using it!

Pumpkin Granola Bars

 

Prep Time: 5 min. Baking Time: 20 min. Total Time: 25 min. Portions: 12 bars

 

Ingredients:

  • 2 cups oat

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon pumpkin pie spice

  • ½ teaspoon cinnamon

  • ¾ cup oat flour (process oat in a blender to make your own)

  • 4 tablespoons coconut oil or butter

  • ½ cup honey

  • ½ cup pumpkin puree

  • 1 teaspoon vanilla extract

  • 1/3 cup chocolate chips

Directions:

  1. Preheat your oven to 350 F or 175 C. Line an 8x8 inch or 20x20 cm pan with parchment paper.

  2. In a large bowl mix together the oat, baking soda, salt, pumpkin pie spice, cinnamon and oat flour.

  3. In a seperate bowl melt the coconut oil or butter and stir it together with the honey, pumpkin puree and vanilla extract.

  4. Pour the wet mixture to the dry and toss them together until everything is coated. Fold in the chocolate chips.

  5. Press the mixture into the baking pan. Bake for 20 min and let it cool down completely before cutting into 12 bars.
