The fastest, easiest, yet delicious recipe in the summer time. Quick, crunchy homemade granola, honey cinnamon frozen yoghurt, and caramelized, sweet grilled nectarines. A seriously good combo!


Countless different grilled fruit recipes are all over the internet nowadays. I've always wanted to try one and I finally did! I don't know why just now though! I mean it's so easy to make and very customizable. If you do not want to make your own granola you can use store bought or just leave it out. You can use ice cream instead of the frozen yoghurt. Instead of nectarines you can grill apricots, apples, plums or pineapples. See? Endless possibilities.


This time I made some oven baked granola with oats, sesame seeds, flaxseeds, sunflower seeds and coconut flakes, but you can use whatever you have on hand. It's a really simple recipe: you just mix everything together, put on a baking sheet and bake. Or you can use my no bake stove top granola recipe too. Warning, it is extremely dangerous!Once you start, you just can not stop eating it!


While the granola was in the oven I quickly mixed some honey, cinnamon and greek yoghurt and put it in the freezer. I think it was the best when it was neither completely frozen nor runny. (And it's also easier to scoop when it's not as solid as a brick.)


And the nectarine part... I do not think it really needs an own paragraph. You just cover the half with the cinnamon-sugar-butter mixture and grill them. That's all. I used a grill but you can use a grill pan too.


The textures and the flavors are soo amazing together. A sweet juicy warm nectarine with the cold creamy frozen yoghurt and the super crunchy granola is really a winning combination!


Grilled Nectarines with Honey-Cinnamon Frozen Yoghurt and Granol

 

Prep Time: 10 min. Baking Time: 15 min. Total Time: 45 min. Portions: for 4 person

 

Ingredients:

Granola:

  • 1 cup or 110g oats

  • ¼ cup or 35g seeds (I used a mixture of sesame seeds, flaxseeds and sunflower seeds)

  • 1 tablespoon of coconut flakes

  • 1 tablespoon butter

  • 4 tablespoons honey

  • 1/8 teaspoon of cinnamon

  • 1/8 teaspoon cloves

  • 1 tablespoon water

  • 1 tablespoon of sugar

Honey-Cinnamon Frozen Yoghurt:

  • 1 and 1/2 cups of greek or plain yoghurt

  • 3 teaspoons honey

  • ¼ teaspoon cinnamon

Grilled Nectarines:

  • 4 nectarines (cut into halves)

  • 2 tablespoons brown sugar

  • 4 tablespoons butter

  • ¼ teaspoon cinnamon

Directions:

Granola:

  1. Preheat your oven to 350F or 175 C. Line a baking sheet with parchment paper.

  2. In a medium bowl mix the oats, seeds, and coconut flakes.

  3. In a seperate bowl melt the butter, add the honey, cinnamon, cloves, water and sugar.

  4. Pour the buttery mixture into the oats. Toss them until everything is coated.

  5. Spread the mixture onto the baking sheet in a single layer. Bake it for 5 minutes then toss and bake for 5-10 more minutes. Take it out and let it cool down. It'll get crispier as it cools down.

Honey-Cinnamon Frozen Yoghurt:

  1. In a bowl mix all the ingredients and place in the freezer for 1-1.5 hours.

Grilled Nectarines:

  1. Preheat the grill or grill pan to medium heat.

  2. In a small bowl melt the butter, add the brown sugar and cinnamon. Cover the fruit with the mixture and grill for 2-3 minutes each side or until your see grill marks.

  3. Serve them warmly with a scoop of the frozen yoghurt, a generous amount of granola and a drizzle of honey.
