Sweet, creamy, rich cream cheese with tangy sour cherry sauce and crispy granola. This is the ultimate no-bake Valentine’s day dessert.


For me Valentine’s day is another reason to bake/make something delicious for my family. One of my favourite recipes around this time is parfait, because you can make as many portions as you need and add personal touches to everyone’s glass.


This recipe is also perfect for using leftovers. If you have some creamcheese or mascarpone, some kind of fruit sauce or jam, fresh fruits, nuts, or cookies this is the best way to use them. And the possibilities are endless.


The base is a simple cream cheese filling, this time I used mascarpone. And because valentine’s day isn’t perfect without chocolate I added some melted white chocolate, one of my best decisions ever ).


To balance out the sweet white chocolate I made a simple and fast sour cherry sauce. It is tangy and sweet at the same time. But you can use any kind of jam or store bought fruit sauce instead.


Then for the crunchiness I made some „fake” granola. This is the easiest granola recipe and you don’t even have to turn your oven on. I melted some butter and honey in a frying pan and added the oats, walnuts. That’s it, easy peasy. Or use one of your favourite cookie crumbs and pieces.


You can make everything a day ahead, then keep the cherry sauce and the cream cheese filling in the fridge and the granola in an air-tight container. So on Valentine’s day you just have to serve them.


Seriously this is one of the easiest recipes but it's sooo delicious and I loooove all the textures and the flavors. Am I the only one who thinks sour cherry and white chocolate should be a more popular flavor combination?

White Chocolate Sour Cherry Parfait

 

Prep Time: 10 min. Cooking Time: 10 min. Total Time: 30 min. Portions: 4-6 person

 

Ingredients:

For the sour cherry sauce:

  • 200g sour cherry (seedless weight)

  • ¼ cup sourcherry juice (I used some canned cherries and the juice from the can but you can use store bought juice or just use water instead)

  • ¼ cup water

  • 3 tablespoons granulated sugar

  • 1 tablespoon flour

For the granola:

  • 35g butter

  • 2 tablespoons honey ( I use some cinnamon flavored you can use plane honey and add some cinnamon)

  • ½ cup oats

  • 5 tablespoons chopped walnuts (or any kind of nuts)

For the creamcheese part:

  • 75g white chocolate

  • 200ml heavy cream (cold)

  • 200g mascarpone or creamcheese

  • 3 and ½ tablespoons powdered sugar

  • 1 teaspoon vanilla extract

Directions:

For the sour cherry sauce:

  1. In a small sauce pan add the cherries, the juice, the water, the flour and the sugar then cook them while constantly stiring until the sugar is completely melted and it’s thickened a little bit. Let it cool down.

For the granola:

  1. In a frying pan add the butter and the honey and melt them together.

  2. Add the oats, the walnut and you can season it with cinnamon.

  3. Cook them for 3-5 minutes and make sure they don’t stick down. Let it cool completely.

For the cream cheese part:

  1. Melt the white chocolate, and let it cool down until lukewarm. In a large bowl whip up the cream until soft peaks. Add 2 tablespoons of the confectioner sugar then whip the cream until stiff peaks.

  2. In an other bowl whip up the cream cheese then add a splash of vanilla extract, the melted white chocolate and the other 1 and ½ tablespoons sugar. Beat until everything is blended.

  3. Carefully fold the whipped cream into the cream cheese mixture in two batches. Don’t over mix it!

Serving:

  1. Add a layer of the granola into the glasses.

  2. Evenly cover them with around two heaped tablespoons of the creamcheese mixture then pour some of the cherry sauce on the top.

  3. Add some more granola, then two more tablespoons of the mixture. Finally add some more cherry sauce and granola for decoration. This recipe makes around 4-6 portions.
