The famous, the one and only Hungarian dessert called Túró Rudi, but in cake form. Chocolate sponge, light sweet curd cheese layer, fudgy chocolate sauce and chocolate ganache.


Let me talk about Túró Rudi. It’s a cold dairy dessert that you can find in the fridge section of every grocery store in Hungary. It’s a chocolate covered „túró” aka. sweet curd cheese bar. I mentioned túró before on the blog for example in my sweet curd cheese dumpling recipe and I also have a breakfast braid recipe with it. I know it might sounds pretty bizarre for everybody else on the world but trust me if you can find túró or sweet curd cheese in your country you need to try one of these recipes!


For the base I used a simple chocolate sponge recipe and just for extra chocolate flavour I drizzled it with my all time favorite fudgy chocolate sauce the one I use in tons recipes. Then comes a layer of the light sweet curd cheese filling, a drizzle of the chocolate sauce and the rest of the filling.


For decoration I made a simple chocolate ganache because one it’s the quickest way to decorate a cake and two it reminds me of the chocolate coating on a Túró Rudi.


It’s a super quick almost completely no bake recipe. The one part that requires oven is the sponge all the other parts only need some chilling in the fridge. Easy peasy!


I almost forgot to tell the best thing about it. You can make it kind of healthy with substituting the sugar with any other type of sweetener. So this cake is basically good for you. No excuses!

Túró Rudi Cake

 

Prep Time: 30 min. Baking Time: 20 min. Total Time: 4+ hours Portions: 8 -10 slices

 

Ingredients:

For the sponge:

  • 65g dark chocolate

  • 65g butter (room temperature)

  • 85g powdered sugar

  • 1 egg

  • ½ teaspoon vanilla extract

  • 35g all-purpose flour

For the sweet curd cheese filling:

  • 500g sweet curd cheese

  • 200 ml heavy cream

  • 100g powdered sugar

  • 2 teaspoons vanilla extract

  • 15g gelatin powder

  • 1 teaspoon lemon zest

For the ganache:

  • 150g dark chocolate

  • 75 ml heavy cream

+ One recipe of this chocolate sauce or any chocolate sauce you have on hand

Directions:

Sponge:

  1. Preheat your oven to 300 F or 150 C. Line an 8 inch or 20 cm round cake pan with parchment paper.

  2. Melt the chocolate in the microwave in 30 second intervalls. Set it aside.

  3. In a medium sized bowl mix the butter and powdered sugar together until it’s pale and fluffy. I used a hand held electric whisk.

  4. Add the egg and the vanilla. Mix for one more minute.

  5. Add the flour and mix just until it’s incorporated.

  6. Mix in the melted chocolate.

  7. Spread the batter in the pan and bake for 20 minutes or until a fork comes out clean. Let it cool down completely.

Sweet curd cheese filling:

  1. While the sponge is cooling make your filling. First mix in a large bowl the sweet curd cheese, powdered sugar, vanilla and lemon zest together.

  2. In a medium sized pot bring your heavy cream to a boil then add the gelatin powder. Whisk until it’s completely disolved. Let it cool down for a few minutes.

  3. Add the cream mixture into the sweet curd cheese mixture and mix them together.

Assembling the cake:

  1. Set the sponge into an 8 inch or 20 cm round cake ring. Drizzle it generously with the chocolate sauce.

  2. Spread half of the sweet curd cheese filling on top of the sponge, drizzle it with more chocoalte then add the rest of the filling.

  3. Put it in the fridge for at least 4 hours.

  4. Melt the chocolate and the heavy cream for the ganache in the microwave, stiring it after every 30 seconds. Let it cool down a bit until it’s not too runny.

  5. Remove the ring from the cake and spread the ganache on top of it. Let it drip down on the sides. Serve it cold with an extra drizzle of chocolate sauce.
