This happens when you combine the two best thing. Brownies and cookies in one bite aka Brookies. No words!


I have to admit that the Brookie is not my idea. I saw it on pinterest and I knew I must recreate it. But God whoever made this first was a genious! I mean this is the best idea ever. I love these dessert combinations like cookie ice cream sandwiches, cronuts and all the others. I think there is only really 0.1% chance that you combine two desserts into one and it turns out bad. And these cookies aren’t in that 0.1%. Not at all!


Basically I have just combined two of my cookie recipes. The simple chocolate chip and the brownie cookie recipes. As I expected, they turned out phenomenal.


Chewy, moist cookies with chocolate chips and rich, fudgy double chocolatey brownie cookies. This is definitely a must have.


Both of the recipes are pretty easy to make and I have shared them before. I made half of my chocolate chip cookie recipe and one batch of brownie cookie recipe. At the end I had 36 brookies and 11 simple brownie cookies.


And last but not least they are easy to make. The only thing is that you have to make two doughs, one for the brownie part and one for the chocolate chip cookies. I would recommend to make the brownie batter first, because that one has to rest in the fridge, so you can work with it. Until it chills in the fridge, make the cookie dough.


I used one tablespoon cookie dough and one tablespoon brownie batter to make one cookie. First I scooped the cookie dough onto the baking sheets, leaving quite big spaces between them. I scooped the brownie batter next to each cookie dough. Then with my fingers, I slightly pinched them together and pressed them into a ball shape. That’s it.

Prep Time: 30 min. Baking Time: 10 min. Total Time: 1,5 hours Portions: 36 brookies +11 brownie cookies

 

Ingredients:

For the brownie part:

  • 1 and ¼ cups or 175g all-purpose flour

  • ½ teaspoon baking powder

  • ½ teaspoon salt

  • 1/3 or 75g cup butter

  • around 250g dark chocolate

  • 1 cup or 220g granulated sugar

  • 2 eggs

  • 1 teaspoon vanilla extract

For the chocolate chip cookie part:

  • 1/2 cup or 1 sticks or 115g butter (room temperature!)

  • 1/4 cup granulated sugar

  • 1/2 cup brown sugar

  • 1/2 teaspoon salt

  • 1 teaspoon vanilla extract 1 egg

  • 1 and 1/8 cups or 160g all-purpose flour

  • 1/4 teaspoon baking soda

  • 1 cup or 170g chocolate chips

Directions:

For the brownie cookie part:

  1. In a medium bowl mix together the flour, baking powder and salt. Set it aside.

  2. In a large microwave safe bowl melt the butter and 100 g of the chocolate at 30 second intervalls. Let it cool down for a few minutes.

  3. Mix the eggs, vanilla and sugar into the buttery mixture.

  4. Add the dry ingredients into the wet mixture and stir until everything is combined.

  5. Chop up 50g of the chocolate and add it to the mixture. If your mixture isn’t dark enough at this point melt some more of the chocolate and add it to the batter.

  6. Put it in the fridge for an hour or until it firms up. (You can put it in the freezer to reduce cooling time)

For the chocolate chip cookie part:

  1. In a big bowl mix the butter with an electric mixer on a high speed until it’s really pale and fluffy. (I used a standing mixer.)

  2. Add both sugars and mix on a medium speed until smooth.

  3. On a low speed add the eggs one at a time, the vanilla and the salt. Mix for 1 minute.

  4. In a medium bowl mix together the flour and the baking soda.

  5. Add the flour mixture into the wet ingredients in small portions. Mix them just until everything is combined.

  6. Fold in the chocolate chips.

  7. After one hour take out the brownie mixture from the fridge.

  8. Preheat your oven to 350F or 175C and line a baking sheet with parchment paper.

  9. Make balls from the cookie dough with a cookie scoop (1 tablespoon) or a spoon. Place them on the baking sheet. Leave at least 3 inches space between the cookies. I baked 9 cookies at a time.

  10. Scoop one tablespoon of the brownie mixture next to each cookie dough.

  11. Pinch them together. Then press them into ball shape.

  12. Bake them for 8-10 minutes. It’s good when the cookies are slightly soft and underbaked in the middle but the edges are firm. Don’t over bake them! Let them cool on the sheet for 10 minutes then transfer them onto a wire rack. The cookies firm up as they cool.
